We usually forget that essentially there is only one single settlement area -the world- and that we live in a wide variety of different climates within that geography. We forget that we eat one another’s foods, that we influence one another’s food cultures, and that the exchanges and cultural osmosis are mutual. And we mustn’t forget that food culture is a phenomenon that has been with us since the beginning of human evolution. The cultural transformation is ongoing. Even before we existed in this geography, its cuisines were taking shape. And they continue to morph and take shape while we’re here, and this process will continue once we have passed on, too.
